Secret de Chardonnay
Présentation : | In the vineyard Varietal: Chardonnay Terroir:Clay-limestone Exposure:South and SouthWestslopes Density: 9000 vines per ha Vine age: up to 103 years Yield: 50 to 60 hl/ha Harvest:by hand, crushed, double sorting on the parcel Winemaking Both fermentations are carried out in temperature controlled vats between 15 and 18°C, allowing us to retain a lot of freshness and the varietal aromas in this wine. The must is racked over 12 to 18 hours at very low temperatures after a low pressure pressing that allows the must to eliminate the maximum possible deposit and later, to only be filtered very lightly so as not to tire the wine. About 20% are made and aged in barrels to give more fatness and more complexity. Alcohol content: 13 % vol. |
Dégustation : | The color is bright and clear with a pale yellow color & silver glints. Franc aromas of white and dried fruits are opulent. The palate is tender with lactic notes, the finish is round and soft. A wine in good shape with its vintage. A beautiful wine pairing with a pikeperch with white butter, and a sauce with a little acidity will make the perfect balance. Serve at about 12°C |
